MYTH #7: APPLE CIDER VINEGAR- The Apple Cider Vinegar Diet has no evidence for promoting weight loss, but claims many health benefits from taking a small amount (2 teaspoons in water) or taking a capsule or gummy supplement. While there are no studies showing weight loss, 20 grams of apple cider vinegar in a study of individuals with increased blood sugar published in 2004 slightly reduced blood sugar and insulin over 60 minutes after a meal (see slide). The theory is that the acetic acid in vinegar inhibits an enzyme that breaks down starch called glucosidase. This theory does not hold up as even a drug that effectively inhibits this enzyme (acarbose) does not cause weight loss.
